Quesadilla filled with orecchiette blended with smoked gouda , sharp white cheddar, pepper jack, and cheddar cheese with pan fried pancetta and seasonal red poblano peppers that were locally grown. Served with house made salsa and a chili sour cream.
Bill was a kind and gentle soul who frequented Manoa back in 90s and 00s. Loved the outdoors and always had a listening ear for folks having difficulties. He passed away way too young.
